Chicken and Dumplings

My cousin Savannah had asked me a while back to write a recipe for chicken and dumplings. I never cooked it before and I love a good challenge so I researched tons of recipes and came up with my own that worked best for my taste. And not to toot my own horn, but TOOT TOOT! It came out so good! Such a comforting and warm dish. I hope you all try and enjoy,


1 pack large pack of bone in thighs 

3 large chicken breast diced into 1 inch cubes 

Water 

48 oz chicken stock 

6 large carrots diced up 

3 onions 

1 rib of celery diced 

1 bag of frozen peas 

1 can cream of chicken 

2-3 bay leaves  

1 tsp sage

1 tsp thyme

Red pepper

Black pepper 

Onion powder 

Garlic powder

Salt

Cajun seasoning

1/2 cup flour 

About 3/4 cup of diced Fresh Parsley

For the biscuits:

2 cups flour

1 tbsp baking powder

Salt and pepper to taste 

1 1/3 cup heavy whipping cream 

  1. Place bone in thighs in your pot. Season with red pepper, black pepper, salt, garlic powder, onion powder, and add bay leaves. Add water to your pot until it covers the chicken. Add one diced onion. Turn stove on high and boil until cooked. Should take about 45 minutes or so.

  2. Take your chicken thighs out of pot and place in a bowl. Shred the meat off the bone with your fingers or a fork then discard all the bones. Pour your chicken stock out into a separate bowl and reserve for later. Dice up your remaining two onions, celery, carrots, and garlic.

  3. Melt 1.5 sticks of butter in pot and add your diced onions, carrots, celery, and garlic. Sauté until veggies are slightly softened.

  4. Add your chicken breast and season. I seasoned mine with my favorite Cajun seasoning. Stir around until chicken is mostly cooked.

  5. Sprinkle 1/2 cup of flour over your chicken and veggies and stir around for a few minutes.

  6. Add in your shredded thigh meat, homemade chicken stock, and store bought chicken stock and bring to a boil. Turn heat down to medium/high.

  7. Add in your can of cream of chicken, peas, sage, and thyme. Cook until carrots are soft and chicken is cooked through. Then, place on high simmer or a low heat.

  8. Mix all ingredients for dumplings and form into 1 inch balls. Add chopped parsley to pot. Place all dumplings in pot and cover. Cook dumplings for 30 minutes or until cooked through.

  9. Serve and enjoy!

I’ve found that most recipes say drop dumplings in and cook for 15 minutes on simmer but I’m here to say that’s a bunch of BS… So cook for at least 30 then check.
