White Bean and Beef Roast Chili

1 2-3 lb beef roast cubed

water

1 can Campbell’s beef stock

1 onion chopped

1 bell pepper chopped

1 head of garlic minced

2 stalks celery diced

1 can of rotel

Cajun Seasoning of your choice to taste

1 8 oz can of tomato sauce

1 lb of Camelia navy beans

4 tbsp chili powder of your choice

1 tsp cumin

1 tsp sugar

1 tbsp garlic powder

1 tsp salt

1 tbsp zydeco chop chop

1 tsp oregano

1 tbsp beef base or bouillon

Cajun seasoning to taste for beef while browning (I used Bourques Hot)

2 tbsp paprika

2 tbsp Cajun power Worcestershire sauce

I never even heard of white bean chili until a few years ago when my MIL told me about it. There’s a lot of chicken white bean recipes out there but I just always liked the idea of beef in mine. It’s a perfect lazy day/work day meal for your slow cooker or just a good ol hearty meal. You can literally dump all the ingredients in and go. I browned my meat this time before putting it in but I have also dumped all the ingredients in and it was still delicious!

  1. Rinse beans and then place in slow cooker with about an inch or two of water on top and set aside. Dice all your veggies including onion, bell pepper, celery, and garlic. Gather all your seasonings in a bowl so you can just dump them in later.

  2. Add in tomato sauce and all seasonings except Cajun seasoning into slow cooker. Place slow cooker on low.

  3. Cube up your beef roast then put about 1-2 tbsp olive oil in a cast iron skillet or your favorite pot on a high heat setting. Once your pot is hot, dump in beef cubes, season generously with Cajun seasoning to taste, and brown for about 10-15 minutes or until browned.

  4. Place all your veggies in. (Onion, bell pepper, garlic, and celery) Brown all that for a few minutes. Add rotel then scrape all that goodness into your slow cooker.

  5. Cook on low for about 8 hours or until beans are tender. You can also place on high it you want it sooner and that should take about 4-6 hrs or until tender. Taste toward the end of cooking to see if spicy/salty enough. I had to add in more Bourque’s HOT Cajun seasoning but I prefer my food on the spicy side.

  6. Serve and enjoy!

Yummy toppings can include red onion, jalapeños, sour creams, cheese, and avocado.

Keep in mind… If you’re feeling lazy or don’t have time, you can skip the browning and just dump it all in. I find that browning does make the flavor a better but it still tastes amazing without.
