Taunte’s Crawfish Pasta

This recipe is from my best friend and the best Taunte to my kids, Janie Stelly! I’m very blessed to have her. And it doesn’t hurt that she can throw down in the kitchen! She cooked for us this past Sunday and it was such a treat. Here is her legendary Crawfish Pasta! Or Crawfish Fettuccine! Around here, we call it crawfish fettuccini even though penne noodles are used. It’s just what we call it. We don’t know why, we just do. She prefers to use penne pasta vs fettuccini because the sauce is able to get inside the noodle. It is insanely good and never disappoints.

2 onions diced

1 bell pepper diced

1 head of garlic minced

1.5 sticks of butter

Few dashes Lee and Perrins Worcestershire sauce

Few dashes of Tobasco hot sauce

I small package of mushrooms diced

2 lb crawfish

red pepper

salt

black pepper

garlic powder

onion powder

1 tsp Italian seasoning

Slap Ya Mamma Cajun seasoning

1 can roasted garlic cream of mushroom

1 can golden mushroom

1 tbsp Zydeco Chop Chop

Roughly 10 oz Mexican velveeta cheese

1 pint of heavy whipping cream

2 packages of penne noodles cooked

  1. Melt butter on medium/high heat then add your diced onions and bell peppers and brown. Add a few dashes of Lee and Perrins Worcestershire and Tobasco while browning.

  2. Once your veggies are browned, add half of your diced mushrooms in and brown. Throw in your diced garlic and brown.

  3. Once everything is browned to your liking, add your crawfish and brown. Season your crawfish with red pepper, black pepper, salt, garlic powder, and onion powder to taste.

  4. Add one can roasted garlic cream of mushroom and 1 can golden mushroom then throw in the second half of your diced mushrooms.

  5. Cook everything together for a bit, add zydeco chop chop, and then add your cheese. (She uses about 2/3 of the 16 oz Mexican velveeta block)

  6. While the sauce is simmering, cook your noodles. She prefers penne because the sauce is able the get inside the noodle.

  7. The sauce will keep thickening, so add whipping cream and/or chicken stock to get to consistency you want. Add Slap Ya Mamma Cajun seasoning and Italian seasoning to taste while simmering.

  8. Add in your noodles. Mix and serve.
