Deer Stroganoff
Stroganoff’s history started with a French chef who worked for a wealthy St. Petersburg family who created the dish for a cooking contest in 1891. Following the Russian custom of the day, he named the prize-winning dish for his employer, Count Pavel Alexandrovich Stroganov. (Pictured below) The original dish was said to be beef. Throughout the years, there have been dozens of variations of the recipe. I decided to make mine using venison. While most would imagine this dish prepared in a Russian palace, you’ll have to settle for my images below where I cooked my very own version of it for my Daddy’s birthday at our hunting club Brushey Bayou which can be though of as our very own Cajun palace on the bayou. 2 lb deer ground deer meat or beef
2 tbsp olive oil
Red pepper
salt
Black pepper
Onion powder
Garlic powder
Half stick of butter
1 large onion diced
1 bell pepper diced
1 head of garlic diced
2 tbsp Worcestershire sauce
1 pint whipping cream
2 tbsp sour cream
1 tbsp whole grain mustard (Dijon mustard would also work)
2 cups beef broth
1 pack brown mushrooms sliced
I package egg noodles
2 bay leaves
1/2 cup chopped Parsley
1/2 cup chopped Green onions
Add oil to your pot then add the ground meat. Season with red pepper, black pepper, salt, onion powder and garlic powder to taste. Once thoroughly browned, remove meat from the pot.
Add butter and sauté your onion, bell pepper, and garlic.
Then, add your mushrooms. I like to sauté the mushrooms in a little red wine (approximately half a cup or so).
Add flour and mix in stirring constantly.
Add beef broth, Worcestershire sauce, Dijon mustard, bay leaves and whipping cream. Stir well then add the sour cream. (Tip: add some of the sauce from your pot to your sour cream in a separate bowl and stir before putting it in the sauce so it doesn’t separate) Then, add ground meat back to your pot.
Add chopped green onions and parsley.
Bring to a boil then place your heat on simmer until sauce has thickened to desired consistency. Add in your egg noodles and enjoy!
